Fall into Winter- Easy quick meal ideas (SOUP)

It's my all time favorite time of year, the Fall into Winter time! It's beautiful outside. Leaves are changing colors, the air is crisp and fresh, the markets are full of wonderful Winter squashes and it's SOUP SEASON! One of my all time favorite foods is a hearty delicious soup. Almost any kind of soup can make my day! Soup is SO versatile and can be made with almost any ingredients that you have in your fridge. Soups can be made ahead of time and easily stored in your fridge for a week or in or freezer for a few months. Soup ideas: Any squash!!! Carrot Broccoli Any beans Cauliflower Onion Kale Any veggies that are leftover- Roasted veggies are the best! Chicken and roasted veggies Tortilla soup (either vegetarian or chicken) Red pepper You can experiment with different bases to the soups. I use a vegetable broth base, usually saute some onion and garlic, cook the vegetable either by sauteing, roasting or lightly steaming, add spices, the either pureed into a creamy soup or leave whole for a chunky soup. It's the easiest way to stay on track with clean eating and staying healthy, but it's also super yummy! Be creative & experiment with different veggies, meats and beans. You can also make the base of your soup in the beginning of the week with roasted and pureed veggies then add the meat or beans later in the week. Don't get stuck in a rut especially this time of year when the options seem endless in the produce aisle. Happy Monday!
